Feeling ‘downtown’ and is craving for something light to ingest? Why not try this “light mushroom soup“. It’s light, easy to your stomach plus it’s healthy and is loaded with vitamins.
What you’ll need:
1 medium chopped onion
3 cloves crushed garlic
1 pack oyster mushrooms in strips
2 cups pepper leaves
3 cups organic chicken broth (low sodium)
1 tsp. fish sauce
Dash of pepper
What you need to do:
In a casserole, saute onion and garlic in 1 tbsp. of coconut oil. Put in the oyster mushrooms together with the fish sauce and pepper. Mix well for about 2 minutes. Add the chicken broth. Simmer while covered for 5 minutes in lop heat. Take the lid off and put in the pepper leave. Let it simmer uncovered for another 2 minutes and tada! your light mushroom soup is done in under 10 minutes! You may serve it with Himalayan salt on the side.
This is the perfect soup for summer. It’s light but filling. Use the Himalayan salt as table salt to maximize the benefits of the 80 minerals it contains. Heat while cooking the dish as it degrades some of the really useful minerals it contains.
